Hawaiian Ahi with Linguine

Using Hawaii's Gold Macadamia Oil


1/2 lb. linguini
1 lb. Hawaiian ahi fillet or other firm white fish
3 Tbsp. Oils of Aloha Hawaii’s Gold Macadamia Oil
1/2 onion, thinly sliced
1 clove garlic, minced
3 Tbsp. white wine
2 Tbsp. thinly sliced sun dried tomatoes
2 Tbsp. capers
1/4 cup grated Parmesan cheese
1/2 tsp. salt
1 Tbsp. minced parsley


In a food processor combine garbanzo beans, tahini, macadamia oil, lemon juice and cumin. Purée the ingredients, slowly adding the reserved liquid from the garbanzo beans, until mixture is a smooth paste. Chill and serve as a dip for vegetables or crisp pita chips. Makes 2 cups.
